Modern Australian

Smolt's younger funkier sibling is all about the share. The open converted office foyer space offers multiple configurations for socialising and a festive mood, so bag some friends for best results. Start with a vibrant cocktail or let the knowledgeable bartender recommend a wine from the South American and Tasmanian selection. Small plates, like a coconut-flavoured white fish and prawn ceviche, are appealing, but save space for the meat. This is as close as you'll get to a Buenos Aires parrilla in Hobart - the meat tender, perfectly rosy and served with chimichurri and salsa picante. The good work continues with desserts. A chocolate parfait with strawberry gel meets the elusive cacao tipping point between sweet and bitter, while charred banana with almond and caramel ice-cream is simple and moreish. Best of all, Frank comes with an access-all-areas view of the Hobart waterfront.
