You can eat à la carte at Templo, but going your own way in a 20-seat restaurant with a round communal table at its heart might be missing the point. The tiny shopfront's ever-changing blackboard menu usually lists 10 dishes max, including dessert, so the $65 chef's menu not only gets you a good-value taste of most of that, it provides the perfect conversation fodder with your dining companions. There are many good things to talk about - light and crisp gnocco fritto wrapped in prosciutto or farfalle tossed with ricotta, basil leaves and tomato or beetroot and smoked onion or a superbly cooked veal cotoletta - alongside an interesting wine list that's as big on small producers from the Old World as it is the local stuff. Eating in this cosy, closely packed timber and exposed-brick room and being carefully looked after by engaging staff feels unique, bespoke and the kind of dining experience that current-day Hobart does very, very well.
